Who Are We
Tara Royer Steele
Tara has been in the food industry since she was a child. She is the reigning Pie Queen at Royers Cafe and Royers Pie Haven, both in Round Top, Texas. In her words, Tara is a mother to 2 beautiful boys, married to an amazing man (Rick), is a professional font doodler, and is blessed with great relationships.
Rick has a diverse background. In school he studied drafting & design and criminal justice, and also has his real estate license. He spent five years working for the Boys & Girls Club in Bryan, Texas. After meeting Tara and having a passion for business he went to work for Royers Cafe in Round Top, where he’s been for the last ten years.
With a background of more than 20 years in computer technology, Jacob knew it was time for a change. In the summer of 2013 he helped a good friend launch Righteous Bros Coffee Roasters, which is now District Roasters. Through this he discovered a love for roasting great coffee. Jacob is also a member of the SCA and Roasters Guild of America.
It was late August in 2015 and Jacob had just left his previous coffee endeavor and Rick and Tara were looking for a change with their current coffee program. After a brief conversation Two Sparrows was formed.
From the beginning community was important to them. Coffee was going to be the vehicle that helped create it. After all it is what connected them in the first place.
Through many cups and developing roast profiles, late nights and early mornings Two Sparrows began to take off. In July of 2016 they opened a small retail outlet and roasting ops in Round Top TX. Under the shade from the oak trees in Henkel Square you can find their shop just to right of the infamous Pie Haven.
As an organization we are deeply committed to fostering community through coffee. To do this we roast great coffee, it’s as simple as that.
We see coffee through the lens of the letter C:
- Craft: Coffee is our craft and we are committed to constantly honing it.
- Community: Coffee is a great means to be known and get to know others. Most of us have a story about how our lives were changed by someone on the other side of a coffee cup.
- Creativity: Coffee can feel like a “kick-start” to the creative process and get those creative juices flowing.
Culinary: Coffee is the perfect morning eye-opener but it’s also used for more than drinking. Coffee can be used in an array of culinary efforts from marinating to baking and beyond.
At Two Sparrows, Coffee is so much more than that first cup of caffeine to start you day. It’s more than a quick break from the daily hustle or a much needed afternoon pick-me-up.
It’s catching up with an old friend you haven’t seen in a while. It’s a weekend tradition that should be savored and enjoyed. It’s getting to know your neighbors. It’s sharing you life and memories with those close to you. It’s the smile you make when you feel strong, confident & bold.
You see, coffee is so much more that just a beverage, it’s Connection. Love. Vulnerability. It’s humbleness. Grace. It’s COMMUNITY.
